  • 1 cup peanut butter creamy or chunky
  • 1 cup granulated sugar Can be substituted for coconut sugar or maple syrup
  • 1 large egg Use room temperature
  • 1 cup rolled oats Gently folded into the mixture
  • 1 teaspoon vanilla extract Optional, but recommended

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine peanut butter and granulated sugar until well incorporated.
  • Add the egg and vanilla extract (if using), stirring until smooth.
  • Fold in the rolled oats gently until combined.

Baking

  • Using a tablespoon or cookie scoop, drop the cookie dough onto a baking sheet lined with parchment paper, leaving space between each dough ball.
  • Bake for about 10 minutes or until golden brown around the edges.
  • Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to 5 days. For longer storage, freeze in a single layer for up to 3 months. Reheat in the oven at 350°F for about 5 minutes before serving.
