Ingredients
  

  • 1.5 lbs Cod Fillets (about 4 thick fillets)
  • 2 tablespoon Olive Oil or Coconut Oil
  • Salt & Freshly Ground Black Pepper
  • 4 cloves Garlic minced
  • 1 can (13.5 oz) Full-Fat Coconut Milk
  • 1 large Lemon (for both zest and juice)
  • Fresh Parsley chopped

Steps

  • Preheat the oven to 400°F (200°C). Pat the cod fillets dry with paper towels and season with salt and pepper.
  • Heat the oil in an oven-safe skillet over medium-high heat. Place the cod in the skillet and let it sear for 2-3 minutes without touching.
  • Flip the cod, reduce the heat to medium, and add the minced garlic. Stir for about 1 minute until fragrant.
  • Pour in the coconut milk and add the lemon zest. Stir and scrape the brown bits from the pan. Let it bubble gently.
  • Turn off the burner, spoon some sauce over the fish, and transfer the skillet to the oven. Bake for 10-15 minutes until the fish is cooked through.
  • Remove from the oven, squeeze fresh lemon juice over the fish, and top with chopped parsley before serving.

Notes

Fish Subs: If you don't have cod, halibut or haddock work great too. Use full-fat coconut milk from a can for creaminess. Patting fish dry ensures a beautiful golden crust.
