Ingredients
  

Chicken and Vegetables

  • 2 breasts chicken cut into cubes
  • 1 piece bell pepper cut into chunks
  • cup BBQ sauce
  • 4 cups romaine or mixed greens
  • 1 cup cherry tomatoes halved
  • ½ cup corn fresh or canned
  • ½ cup black beans drained and rinsed
  • cup shredded cheddar cheese
  • 2 tablespoon ranch dressing
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions
 

Preparation

  • Toss chicken cubes with olive oil, salt, and pepper.
  • Thread chicken and bell pepper pieces onto skewers.
  • Grill over medium-high heat for 10–12 minutes, turning regularly.
  • Brush BBQ sauce on skewers during last few minutes of grilling.
  • Layer greens, tomatoes, corn, beans, and cheddar in a bowl.
  • Top with grilled skewers and drizzle with ranch and extra BBQ sauce.

Notes

Soak wooden skewers before grilling to prevent burning. Add pineapple or red onion for extra flavor. Serve skewers warm or chilled for picnics. Top with tortilla strips for added crunch.
