  • 2 lbs sirloin beef tips
  • 2 tablespoons all-purpose flour
  • 1 medium white onion, diced
  • 8 oz cremini mushrooms, sliced
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cube beef bouillon
  • 1 tablespoon Worcestershire sauce
  • 1 leaf bay
  • ½ cup pepperoncinis, sliced
  • 1 ½ to 2 cups beef stock
  • 2 tablespoons cornstarch
  • 3 tablespoons water (for slurry)
  • 1 teaspoon kosher salt (or to taste)
  • ½ teaspoon black pepper (or to taste)

Cooking Instructions

  • Season the beef tips with salt and black pepper, then coat evenly with flour.
  • Heat butter in a large skillet over medium-high heat and sear the beef on all sides until browned. Remove and set aside.
  • In the same skillet, add diced onion and cook for 2 minutes while scraping up browned bits.
  • Transfer the beef and onions to a slow cooker or Instant Pot.
  • Add mushrooms, garlic powder, onion powder, thyme, rosemary, bouillon cube, Worcestershire sauce, bay leaf, pepperoncinis, and beef stock.
  • For slow cooker: cook on low for 6-7 hours or high for 3-4 hours. For Instant Pot: cook on high pressure for 35 minutes, then allow natural release for 10 minutes.
  • Mix cornstarch with water to create a slurry, then stir into the pot 30 minutes before finishing (or after pressure cooking).
  • Cook until the gravy thickens to desired consistency.
  • Remove bay leaf, adjust seasoning with salt and pepper, and serve hot.

Notes

Searing the beef enhances flavor and should not be skipped. Use fresh mushrooms for best texture and taste. Adjust gravy thickness by adding more stock or simmering longer. This dish tastes even better the next day as flavors deepen. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
