  • 2 cups White Granulated Sugar
  • 1.5 cups All-Purpose Flour
  • 0.75 cups Black Cocoa Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 large Eggs
  • 1 cup Buttermilk
  • 1 cup Hot Coffee
  • 0.5 cups Canola Oil
  • 2 teaspoons Vanilla Extract

Blackberry Compote

  • 2 cups Fresh Blackberries
  • 2 cups White Granulated Sugar
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Lemon Zest
  • 1 tablespoon Cornstarch
  • 1 stick Cinnamon Stick

Frosting

  • 8 ounces Cream Cheese
  • 0.5 cups Unsalted Butter
  • 4 cups Powdered Sugar
  • 0.75 cups Black Cocoa Powder

Decoration

  • 2 tablespoons Dried Rose Petals optional
  • Chocolate skulls for topping
  • Fresh Blackberries for topping

Preparation

  • Preheat your oven to 350°F (175°C). Grease two 8-inch cake pans with nonstick spray and line the bottoms with parchment paper to ensure easy removal of the cakes after baking.
  • In a large mixing bowl, sift together the all-purpose flour, black cocoa powder, granulated sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk the buttermilk, canola oil, eggs, and vanilla extract thoroughly until the mixture is smooth and well combined.
  • Make a well in the center of the dry ingredients and pour in the wet mixture. Gently blend the ingredients together. Then add the hot coffee, mixing until the batter is smooth and uniform in texture.
  • Pour the batter evenly into the prepared pans. Bake in the preheated oven for 30-33 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes. Transfer them onto a wire rack to cool completely before frosting and assembling.

Blackberry Compote Preparation

  • In a saucepan over medium heat, combine fresh blackberries, granulated sugar, lemon juice, and lemon zest. Cook until the mixture bubbles and the berries break down. Stir in the cornstarch to thicken the compote and remove from heat. Let it cool completely.

Frosting

  • In a mixing bowl, beat together cream cheese and unsalted butter until smooth. Gradually add sifted powdered sugar and black cocoa powder, continuing to beat until the frosting is light, fluffy, and spreadable.

Assembly

  • Using a serrated knife, level the tops of the cooled cake layers so they are flat. On your cake plate, spread a layer of frosting and place the first cake layer on top.
  • Pipe a frosting dam around the edge of the first cake layer to contain the filling, then fill the center with the cooled blackberry compote. Place the second cake layer gently on top.
  • Apply a thin crumb coat of frosting over the entire assembled cake to seal in crumbs. Refrigerate the cake for about 20 minutes to set this layer.
  • After chilling, generously frost the cake with the remaining frosting. Decorate the top with chocolate skulls, fresh blackberries, and sprinkle with crushed dried rose petals for a beautiful and spooky Halloween presentation.

Notes

Black Cocoa Powder gives the characteristic deep black color but can be substituted with regular cocoa for a less intense color and flavor. Hot coffee enhances the chocolate flavor but may be substituted with hot water. Buttermilk adds acidity and moisture and can be replaced with yogurt or milk with vinegar. For a vegan version, substitute eggs with flax eggs and use vegan butter and cream cheese alternatives. The cinnamon stick can be replaced with a pinch of ground cinnamon or omitted. Dried rose petals are optional but add aroma and visual appeal as garnish.
