Instructions
 

  • Finely chop the fennel, celery, and yellow onion using a food processor until smooth. Set aside.
  • Melt butter in a large heavy saucepan over medium-high heat until frothy. Add the chopped vegetables and sauté for 5-7 minutes until soft and translucent.
  • Stir in self-rising flour and cook for 8-10 minutes until bubbly and lightly golden.
  • Gradually add crab base, heavy cream, cooking sherry, half-and-half, and whole milk. Stir and bring to a gentle boil.
  • Once boiling, reduce heat to low and simmer for 8-10 minutes, stirring occasionally until thickened.
  • Remove from heat and gently fold in crab meat; season with salt and pepper to taste.

Notes

Let the stew rest for a few minutes before serving to enhance flavors. Use fresh crab for best results.
