Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups broth
  • 2 cups mixed vegetables
  • 1 cup cooked protein
  • 1 cup milk or cream
  • 2 tablespoons flour or cornstarch
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried herbs
  • 1 cup shredded cheese
  • 2 cups cooked rice or pasta

Instructions
 

  • Heat olive oil in a large pot over medium heat and sauté onion, garlic, carrots, and celery until softened.
  • Add mixed vegetables, protein, and broth, then bring to a gentle boil.
  • Reduce heat and let simmer for 20–25 minutes until vegetables are tender.
  • Stir in milk or cream and add flour or cornstarch slurry to thicken.
  • For casserole variation, mix ingredients with cooked rice or pasta and transfer to a baking dish.
  • Top with shredded cheese and bake at 375°F (190°C) for 25–30 minutes until golden and bubbly.
  • Season with salt, pepper, and herbs, then serve warm.

Notes

This recipe can be easily customized with your choice of vegetables and proteins. For a vegetarian option, omit the cooked protein and use vegetable broth. Leftovers can be stored in the refrigerator for up to 3 days.
