Ingredients
  

MUFFINS

  • 1 large egg, beaten
  • 0.5 cup light brown sugar (110 g)
  • 0.25 cup granulated sugar (50 g)
  • 0.5 cup butter, softened (115 g)
  • 0.25 cup sour cream (60 g), greek yogurt may be substituted
  • 1 teaspoon vanilla extract
  • 2 ripe bananas
  • 1 cup all-purpose flour (125 g)
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder

CREAM CHEESE FILLING

  • 1 large egg
  • 4 oz cream cheese, softened (115 g)
  • 0.25 cup granulated sugar (50 g)
  • 3 tablespoons all-purpose flour

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a mixing bowl, cream together the softened butter, light brown sugar, and granulated sugar until smooth.
  • Beat in the egg, vanilla extract, and sour cream until well combined.
  • Mash the ripe bananas and add them to the mixture, mixing well.
  • In a separate bowl, combine the all-purpose flour, baking soda, and baking powder.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • In another bowl, beat together the cream cheese, egg, granulated sugar, and all-purpose flour until smooth.
  • Fill each muffin cup halfway with banana batter, add a spoonful of cream cheese filling, then top with more banana batter.
  • Bake in the preheated oven for 20-25 minutes or until a toothpick inserted comes out clean.
  • Let cool in the muffin tin for a few minutes before transferring to a wire rack.

Notes

These muffins are best enjoyed warm and can be stored in an airtight container for up to 3 days.
