Ingredients
  

  • 12 ounces wide egg noodles
  • 4 tablespoons butter divided
  • 2 tablespoons olive oil
  • 1 small onion diced
  • 3 cloves garlic finely diced
  • 2 cups mushrooms sliced (Cremini)
  • 2 pounds boneless skinless chicken thighs cut into chunks
  • ½ cup all purpose flour
  • 1 ½ teaspoon paprika
  • 3 tablespoons Worcestershire sauce
  • 4 cups low sodium chicken stock
  • 1 cup sour cream
  • salt to taste
  • freshly ground pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Cook the egg noodles according to package instructions, drain and set aside.
  • In a large skillet, melt 2 tablespoons of butter with olive oil over medium heat.
  • Add diced onions and garlic, sauté until translucent.
  • Stir in sliced mushrooms and cook until softened.
  • Add chicken thighs, season with salt and pepper, and cook until no longer pink.
  • Sprinkle flour and paprika over the chicken, stir to combine and cook for 1 minute.
  • Pour in Worcestershire sauce and chicken stock, bring to a simmer.
  • Stir in sour cream until well combined and heat through.
  • Serve the chicken stroganoff over the egg noodles and garnish with parsley.
