  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 0.25 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped (for garnish)

Cooking Steps

  • Slice the chicken breasts in half horizontally to create thinner cutlets. Season both sides with salt, pepper, and Italian seasoning.
  • Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 7 minutes per side until golden brown and cooked through (internal temperature reaches 165°F). Remove the chicken from the skillet and set aside.
  • Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
  • Add the chopped roasted red peppers and chicken broth to the skillet. Scrape up any browned bits from the bottom of the pan. Simmer for 2 minutes.
  • Stir in the heavy cream and bring the mixture to a gentle simmer. Cook until the sauce slightly thickens, about 3 minutes.
  • Stir in the grated Parmesan cheese until the sauce is smooth. Taste and adjust seasoning if needed.
  • Return the cooked chicken to the skillet, spooning the sauce over the top. Heat through for 1 minute.
  • Garnish with fresh parsley before serving.

Notes

Serve this creamy roasted red pepper chicken over rice, pasta, or alongside steamed green beans. If you prefer a smoother sauce, blend the roasted red peppers and chicken broth together before adding them to the skillet. Use chicken thighs instead of breasts for a richer flavor; adjust cooking time as needed.
