Ingredients
  

Marinade

  • 500 g Boneless Chicken cut into dices
  • 1 Tablespoon Red Chilli Paste
  • 2 Teaspoons Soy Sauce Dark
  • 1 Tablespoon Ginger Garlic Paste
  • ½ Teaspoon Crushed Black Pepper
  • 1 Large Whole Egg
  • 4 Heaped tablespoons Cornflour/Corn Starch
  • 3 Tablespoons Plain Flour
  • 1 Teaspoon Salt
  • Enough Oil for deep frying

Sauce

  • 2 Tablespoons Oil from the frying oil
  • 20-25 Cashew Nuts
  • 4-5 Dry Red Chilli seeded and broken into pieces OR Use just a tablespoon of red chilli flakes
  • 1 Onion medium to large, sliced
  • ½ Tablespoon Chopped Ginger or bit more
  • 1 Tablespoon Chopped Garlic
  • 1 Green Pepper thinly sliced, optional
  • 1-2 Spring Onion Chopped
  • 150 g Tomato Ketchup
  • 1 Tablespoon Light Soy Sauce to start then taste and add more if you like.
  • 1-2 Tablespoons Chopped Coriander

Instructions
 

Marinade Preparation

  • Place all the marinade ingredients in a bowl and mix well. Adjust consistency with egg white or cornflour as needed.

Cooking

  • Refrigerate marinade for at least 30 minutes.
  • Heat oil for deep frying. Mix marinated chicken and fry until well colored. Drain in a strainer.
  • In a frying pan or wok, take 2 tablespoons of the frying oil. Fry cashew nuts until pale colored. Remove them.
  • Add shredded peppers and sauté until they change color. Remove them from the pan.
  • Add red chilli or flakes, ginger, and garlic. Fry until garlic starts to color.
  • Add sliced onion and sauté until soft.
  • Add ketchup, swirling in some water to clean the bowl, and bring to a boil.
  • Add light soy sauce, chopped coriander, spring onions, and then the chicken along with cashew nuts and peppers. Toss until chicken is hot.
  • Serve with reserved coriander and spring onions on top. Can be served as a starter or with rice/noodles.

Notes

The dish can be customized with more or fewer chilies based on personal taste.
