Ingredients
  

The marinade

  • 500 g Boneless Chicken cut into dices
  • 1 Tablespoon Red Chilli Paste
  • 2 Teaspoons Dark Soy Sauce
  • 1 Tablespoon Ginger Garlic Paste
  • 0.5 Teaspoon Crushed Black Pepper
  • 1 Large Whole Egg
  • 4 Heaped tablespoons Cornflour/Corn Starch
  • 3 Tablespoons Plain Flour
  • 1 Teaspoon Salt
  • Oil Enough for deep frying

The sauce

  • 2 Tablespoons Oil from the frying oil
  • 20-25 Cashew Nuts
  • 4-5 Dry Red Chilli seeded and broken into pieces OR Use just a tablespoon of red chilli flakes
  • 1 medium to large Onion sliced
  • 0.5 Tablespoon Chopped Ginger or bit more
  • 1 Tablespoon Chopped Garlic
  • 1 Green Pepper Thinly sliced (optional)
  • 1-2 Spring Onion Chopped
  • 150 g Tomato Ketchup
  • 1 Tablespoon Light Soy Sauce to start then taste and add more if you like
  • 1-2 Tablespoons Chopped Coriander

Instructions
 

For the marinade

  • Place all marinade ingredients in a bowl and mix well. Adjust consistency with egg white or cornflour.

The method

  • Refrigerate the marinade for at least 20-30 minutes.
  • Heat oil for deep frying and fry the marinated chicken pieces until well colored.
  • Drain fried chicken and start preparing the sauce.
  • In a large frying pan or wok, heat two tablespoons of frying oil.
  • Fry cashew nuts until pale and remove, then sauté shredded peppers until they change color and remove.
  • Add more oil if needed, then add red chilli or flakes along with ginger and garlic and fry until garlic starts to color.
  • Add sliced onion and sauté until soft.
  • Add tomato ketchup, swish water in the bowl to clean it out and add the liquid to the pan.
  • Let it boil, then add light soy sauce, chopped coriander, and spring onions followed by the chicken and cashew nuts.
  • Toss until chicken is heated through and taste before serving.
  • Serve with optional coriander and spring onions on top, with rice or noodles.

Notes

Dragon Chicken can be made spicier by increasing the quantity of chillies. Serve as a starter or main dish.
