Ingredients
  

Dry Ingredients

  • 1.5 cups all-purpose flour spooned and leveled
  • 1 teaspoon baking soda
  • 0.25 teaspoon fine sea salt
  • 0.75 teaspoon ground cinnamon

Wet Ingredients

  • 3 medium bananas very ripe bananas are best
  • 8 tablespoons butter melted and cooled
  • 0.75 cup light brown sugar
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 0.5 cup walnuts toasted and chopped, optional

Preparation

  • Preheat the oven to 350°F (176°C) and prepare a loaf pan by greasing and flouring it or lining it with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set this aside.
  • In a large bowl, mash the bananas into a chunky paste. Whisk in the melted butter, brown sugar, eggs, and vanilla until well blended.
  • Add the dry ingredients to the wet ingredients in two parts, stirring until the flour disappears and the batter is smooth. Fold in nuts or chocolate chips if using.
  • Pour the batter into the prepared pan and smooth the top. Bake for 55 to 65 minutes, or until a knife inserted into the center comes out clean.
  • Let the loaf cool in the pan for 5 minutes before transferring it to a wire rack to cool completely before slicing.

Notes

Store in an airtight container for up to 3 days or in the fridge for up to a week. Can be frozen for up to 6 months.
