Ingredients
  

  • 3 tablespoons butter, melted
  • 1 cup sour cream
  • 1 large egg
  • 3 ounces cream cheese, softened
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 can (15 ounces) creamed corn
  • 1 small jalapeño, finely diced Adjust spice level
  • 1 clove garlic, minced
  • 1 cup corn muffin mix
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese, divided

Instructions
 

  • Preheat oven to 400°F and grease baking dish.
  • Whisk butter, sour cream, egg, and cream cheese.
  • Add remaining ingredients and mix gently.
  • Spread mixture into baking dish.
  • Bake for 30 minutes.
  • Add remaining cheese on top.
  • Bake another 10 minutes until golden.
  • Rest 5 minutes before serving.

Notes

Do not overmix batter. Let rest before serving for best texture.
