Ingredients
  

  • 1.5 cups broccoli florets
  • 1.5 cups cauliflower florets
  • 1 cup sliced mushrooms
  • 0.75 cup baby carrots
  • 0.5 red bell pepper, chopped
  • 0.5 small yellow onion, cut into wedges
  • 1.5 tablespoons olive oil
  • 0.75 teaspoon Italian seasoning
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese, optional
  • 1 to 2 tablespoons chopped fresh parsley, optional

Instructions
 

  • Preheat oven to 425°F and line a baking sheet with parchment paper.
  • Add all vegetables to the baking sheet.
  • Drizzle with olive oil and sprinkle with seasonings.
  • Toss until evenly coated.
  • Spread in a single layer.
  • Roast for 15 to 18 minutes, stirring halfway through.
  • Remove from oven and serve warm with optional toppings.

Cut vegetables evenly for consistent cooking. Avoid overcrowding the pan. Serve immediately for best texture.
