Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup fat-free Greek yogurt
  • 2 tablespoons granulated sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 tablespoons brown sugar
  • 1 tablespoon ground cinnamon
  • 1 tablespoon unsweetened applesauce
  • ¾ cup powdered sugar
  • 2 to 3 tablespoons skim milk
  • 0.5 teaspoon vanilla extract

Instructions
 

  • In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add Greek yogurt and vanilla extract, then mix into a soft dough.
  • Transfer to a floured surface and knead gently for 2 to 3 minutes until smooth. Let rest for 5 to 10 minutes.
  • Roll the dough into a rectangle about ¼-inch thick.
  • Spread applesauce over the dough, then sprinkle evenly with brown sugar and cinnamon.
  • Roll the dough tightly into a log and seal the edge.
  • Slice into 8 to 10 rolls and place in a prepared baking dish.
  • Preheat oven to 350°F (175°C).
  • Bake for 20 to 25 minutes until lightly golden.
  • Mix powdered sugar, milk, and vanilla to create the glaze.
  • Drizzle glaze over warm rolls and serve.

Notes

For a richer flavor, add a pinch of nutmeg along with the cinnamon. Store leftovers in an airtight container in the fridge for up to 3 days.
