Ingredients
  

  • 3 large eggs
  • 1 tablespoon unsalted butter
  • 1 teaspoon crème fraîche or sour cream optional, for extra creaminess
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 teaspoon chopped fresh chives for garnish

Instructions
 

  • Crack the eggs into a small saucepan. Do not whisk them yet.
  • Place the saucepan over medium-high heat. Add the butter.
  • Stir the eggs constantly with a rubber spatula, scraping the bottom and sides of the pan continuously.
  • After about 30 seconds, remove the pan from the heat while still stirring for 10 seconds. Return to the heat. Repeat this on-and-off process for 3 to 4 minutes. This controls the cooking temperature.
  • When the eggs are mostly cooked but still look slightly wet and creamy (not fully set), remove the pan from the heat permanently.
  • Stir in the crème fraîche or sour cream, if using. Season with salt and pepper.
  • Serve immediately on toast, garnished with fresh chives.

Notes

Use a non-stick saucepan for the best results and easiest cleanup. Do not overcook; the residual heat will continue to cook the eggs after you remove them from the stove. For a richer flavor, use high-quality butter.
