Ingredients
  

Base Ingredients

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 large yellow onions thinly sliced
  • 2 cloves garlic finely minced

The Rice

  • 2 cups basmati rice rinsed
  • 3 cups chicken broth see notes
  • 0.5 teaspoon sea salt
  • 1 cup grated parmesan
  • 1 cup grated gruyere cheese

Cooking Instructions

  • Heat the butter and olive oil in a large frying pan over medium heat. Add the onion and cook, stirring occasionally, until the onion is translucent, about 3 minutes. Turn the heat down to low and continue to cook until the onions are deep golden and caramelized, about 15-20 minutes. Add the garlic and cook for 1 minute more.
  • While the onions are cooking, add the basmati rice, chicken broth, and salt to a medium-sized pot over high heat. Bring the pot to a boil then reduce the heat to low, cover the pot, and cook for 12 minutes. Remove the pot from the heat and let it rest, covered, for 10 minutes.
  • Set a scoop of the onions aside for serving and then stir the rest into the rice. Add both the cheeses and stir again.
  • Serve the rice with the reserved caramelized onions on top.

Notes

You can use vegetable stock if you want to make this recipe vegetarian. Serve with Italian seasoning chicken and a spring mix salad for a complete meal. Leftovers can be reheated for an easy dinner.
