Ingredients
  

  • 1 pound cooked shrimp peeled, deveined, and chopped
  • 1 medium avocado diced
  • 1 medium tomato diced
  • ½ cup cucumber diced
  • ½ cup ripe mango diced
  • ¼ cup red onion finely chopped
  • 1 small jalapeño seeded and finely chopped
  • 1 tablespoon fresh cilantro chopped
  • 1 clove garlic minced
  • 2 limes lime juice
  • 1 teaspoon olive oil
  • ½ teaspoon lime zest
  • ¼ teaspoon salt
  • to taste black pepper

Instructions
 

  • In a small bowl, whisk together the lime juice, olive oil, lime zest, minced garlic, salt, and black pepper.
  • In a large bowl, combine shrimp, avocado, tomato, cucumber, mango, red onion, and jalapeño.
  • Pour dressing over the salad and add cilantro.
  • Gently toss to combine without mashing avocado.
  • Adjust seasoning with more lime juice, salt, or pepper if needed.
  • Serve immediately or chill for 10–15 minutes before serving.

Notes

Use ripe but firm avocado for best texture. Serve chilled for enhanced flavor. Best enjoyed fresh within one day.
