- 2 large lemons zest and juice
- 1 small shallot minced
- 4 cloves garlic minced
- ¼ cup olive oil
- 2 teaspoons dried oregano
- 1 ½ teaspoons kosher salt
- 1 teaspoon paprika
- ½ teaspoon freshly ground black pepper
- 2 pounds boneless, skinless chicken thighs about 8
- 6 sprigs fresh parsley for garnish
Finely grate the zest of 2 large lemons, then juice the lemons. Mince the shallot and garlic.
Add olive oil, dried oregano, kosher salt, paprika, and black pepper to the bowl. Whisk to combine.
Pat the chicken thighs dry and add to the marinade. Cover and refrigerate for at least 1 hour.
Heat the skillet over medium-high heat and cook half of the chicken until browned, about 5-6 minutes per side.
Repeat with the remaining chicken and garnish with chopped parsley.
