Ingredients
  

  • 2 large lemons zest and juice
  • 1 small shallot minced
  • 4 cloves garlic minced
  • ¼ cup olive oil
  • 2 teaspoons dried oregano
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon paprika
  • ½ teaspoon freshly ground black pepper
  • 2 pounds boneless, skinless chicken thighs about 8
  • 6 sprigs fresh parsley for garnish

Instructions
 

  • Finely grate the zest of 2 large lemons, then juice the lemons. Mince the shallot and garlic.
  • Add olive oil, dried oregano, kosher salt, paprika, and black pepper to the bowl. Whisk to combine.
  • Pat the chicken thighs dry and add to the marinade. Cover and refrigerate for at least 1 hour.
  • Heat the skillet over medium-high heat and cook half of the chicken until browned, about 5-6 minutes per side.
  • Repeat with the remaining chicken and garnish with chopped parsley.
