Seasoned Rice

  • ½ teaspoon salt
  • 1 teaspoon vinegar
  • 1 cup rice Mahatma jasmine rice preferred
  • ½ teaspoon sugar

Shrimp and Sauce

  • 1 teaspoon lime juice
  • 2 tablespoon cornstarch for crispy coating
  • 1 lb shrimp peeled and deveined with tails removed
  • cup chili sauce Mae Ploy recommended
  • 3 tablespoon olive oil
  • ¼ cup flour
  • ¼ cup mayonnaise Hellmann's for creaminess

  • 1 avocado sliced into ¼-inch thick wedges

Preparation

  • Rinse the rice under cold water until clear, then cook as per package directions. Once cooked, add vinegar, sugar, and salt, and fluff with a fork.
  • Whisk together chili sauce, mayonnaise, and lime juice until smooth. In a separate dish, mix flour and cornstarch. Prep cucumber, avocado, and green onions.
  • Heat olive oil in a skillet over medium-high heat. Coat shrimp in the flour-cornstarch mixture. Fry in batches until golden and crispy.
  • Toss shrimp in the bang bang sauce until coated and serve immediately to preserve crispiness.
  • Divide the seasoned rice among bowls, top with shrimp, cucumber slices, avocado wedges, and garnish with green onions.
