Shrimp and Sauce

- 1 lb shrimp peeled and deveined with tails removed
- ⅓ cup chili sauce Mae Ploy recommended
- 3 tablespoon olive oil
- ¼ cup flour
- ¼ cup mayonnaise Hellmann's for creaminess

Preparation
Rinse the rice under cold water until clear, then cook as per package directions. Once cooked, add vinegar, sugar, and salt, and fluff with a fork.
Whisk together chili sauce, mayonnaise, and lime juice until smooth. In a separate dish, mix flour and cornstarch. Prep cucumber, avocado, and green onions.
Heat olive oil in a skillet over medium-high heat. Coat shrimp in the flour-cornstarch mixture. Fry in batches until golden and crispy.
Toss shrimp in the bang bang sauce until coated and serve immediately to preserve crispiness.
Divide the seasoned rice among bowls, top with shrimp, cucumber slices, avocado wedges, and garnish with green onions.
