Ingredients
  

Cake Batter

  • ¾ cup unsalted butter softened to room temperature
  • ¾ cup neutral cooking oil can be avocado, canola, or vegetable
  • 1 cup light or dark brown sugar firmly packed
  • ½ cup granulated sugar
  • 2 large eggs lightly beaten (room temperature preferred)
  • 2 cups mashed over-ripe bananas about 4 bananas
  • 1 8 oz can crushed pineapple do not drain
  • 1 Tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 cup chopped pecans can be left out for allergies

Cream Cheese Frosting

  • ½ cup unsalted butter softened
  • 8 oz cream cheese softened, don't use spreadable
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 cups powdered sugar

Instructions
 

Baking

  • Preheat oven to 350F (175C) and lightly grease and flour the sides and bottoms of two 8" or 9" pans.
  • Combine butter, oil, and sugars in a large bowl and use an electric mixer to beat together until creamy.
  • Add eggs and stir to combine.
  • Add bananas, crushed pineapple, and vanilla extract and stir well.
  • In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  • Gradually fold dry ingredients into wet ingredients, then add pecans and stir until combined.
  • Evenly divide batter into prepared pans and bake for about 39 minutes for 8" pans.
  • Allow to cool for 10 minutes, then invert onto a cooling rack.

Frosting

  • Combine butter and cream cheese in a large bowl and beat until creamy.
  • Stir in vanilla extract and salt.
  • Gradually stir in powdered sugar until fully combined.

Assembling

  • Level cakes if necessary, place one layer on a platter, top with frosting, add second layer and frost the top and sides.

Notes

For best flavor, toast whole pecans in the oven before chopping. Store in an airtight container for up to a day or in the refrigerator for up to 5 days.
