Ingredients
  

Sauce Ingredients

  • 1 tablespoon olive oil
  • 4 links sweet Italian sausage 6 ounces each
  • ¼ cup white wine
  • 1 jar marinara sauce 32 ounces
  • 1.5 cups water
  • 1 package spaghetti 16 ounces
  • ½ cup freshly grated Parmigiano-Reggiano cheese
  • 2 tablespoons chopped flat-leaf parsley or to taste

  • Heat olive oil in a saucepan over medium heat. Add sausage links and cook until browned for about 5 minutes per side. Remove sausages to cool.
  • Add wine to the same pot and simmer, stirring to scrape caramelized bits, until reduced by half, 1 to 2 minutes.
  • Add marinara sauce and rinse jar with water, adding it to the pot. Return to a simmer and reduce heat to low.
  • Slice sausages into 4 pieces and add them into the simmering sauce. Cook gently, stirring occasionally for 1 hour.
  • Cook spaghetti in salted boiling water until firm, about 10 to 11 minutes. Drain and add to the sauce.
  • Mix spaghetti with sauce, cover, and let sit for 1 minute for absorption.
  • Serve pasta with sausage pieces, sprinkled with Parmigiano-Reggiano and parsley.

Notes

Spicy or mild sausage can be used. If the sauce is too thick, add a splash of water.
