Ingredients
  

  • 2 cups granulated sugar
  • 1 cup heavy cream
  • ½ cup light corn syrup
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter for greasing hands and surface

Instructions
 

  • In a saucepan, mix the granulated sugar, heavy cream, light corn syrup, and salt. Stir over medium heat until the sugar dissolves.
  • Continue stirring until the mixture reaches a rolling boil and cook until it reaches the soft ball stage, around 234°F to 240°F.
  • Remove from heat and add in the vanilla extract, stirring well.
  • Allow the mixture to cool for a few minutes, then butter your hands and work surface.
  • Pour the mixture onto the buttered surface and let it cool until safe to handle, about 10-15 minutes.
  • Once cool enough, knead and stretch the candy until smooth, then shape it into desired forms.

Notes

This candy can be shaped into individual pieces or formed into a log. Make sure to work quickly, as the candy will harden as it cools.
