Ingredients
  

Sauces

  • cup mayonnaise
  • 1 tablespoon gochujang
  • 1 teaspoon toasted sesame oil
  • 1 small garlic clove, minced
  • ¼ teaspoon sugar

Glaze

  • 1 ½ tablespoons gochujang
  • 1 ½ tablespoons honey
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons sesame seeds
  • 2 teaspoons water
  • 1 teaspoon rice vinegar

Burger Filling

  • ¾ pound ground beef
  • 5 small flour tortillas
  • 1 cup kimchi, chopped if needed
  • cup sliced green onions
  • Salt to taste
  • Black pepper to taste
  • Lime wedges for serving

Instructions
 

Preparation

  • Make the spicy mayo by mixing mayonnaise, gochujang, sesame oil, garlic, and sugar until smooth.
  • Prepare the glaze by combining gochujang, honey, sesame oil, sesame seeds, water, and rice vinegar.
  • Divide beef into 5 portions and season with salt and pepper.
  • Heat a skillet over high heat.
  • Place beef balls on skillet, press tortillas on top, and smash thin.
  • Cook 2–3 minutes until browned.
  • Flip and cook another 1–2 minutes.
  • Spoon glaze over beef and cook 30 seconds until caramelized.
  • Top with kimchi, spicy mayo, and green onions.
  • Serve with lime wedges.

Notes

Use high heat for best crust. Do not overwork the beef. Assemble just before serving for best texture.
