Ingredients
  

Meatloaf

  • 1.5 pounds Ground Beef, lean
  • ¾ cup Seasoned Breadcrumbs
  • 1 medium onion, diced I used a yellow onion.
  • 3 teaspoon Garlic, freshly minced
  • 1 large Egg
  • ¼ cup BBQ Sauce
  • ¼ cup Tomato Sauce
  • ½ cup Peas, frozen
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Parsley, chopped

Potatoes

  • 1.5 pounds potatoes, peeled and quartered I used Red potatoes.
  • ¼ cup Heavy Whipping Cream
  • 4 tablespoon Butter
  • 1 cup Cheddar Cheese, shredded

Instructions
 

Preparing the Meatloaf

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the ground beef, seasoned breadcrumbs, diced onion, minced garlic, egg, BBQ sauce, tomato sauce, peas, salt, black pepper, and chopped parsley.
  • Mix well until all ingredients are well combined.
  • Transfer the meat mixture to a baking dish and form into a loaf shape.
  • Bake in the preheated oven for about 45 minutes to 1 hour, or until cooked through.

Making the Mashed Potatoes

  • While the meatloaf is baking, place the quartered potatoes in a pot of salted water and bring to a boil.
  • Cook until the potatoes are fork-tender, about 15-20 minutes.
  • Drain the potatoes and return to the pot.
  • Add heavy whipping cream, butter, and shredded cheddar cheese to the potatoes and mash until smooth.
  • Season with salt and pepper to taste.

Final Assembly

  • Once the meatloaf is done, remove it from the oven and let it rest for a few minutes.
  • Spread the mashed potatoes evenly on top of the meatloaf and return to the oven for an additional 10 minutes to melt the cheese.
  • Serve warm and enjoy your meal!

Notes

You can customize the ingredients by adding vegetables like corn or green beans. Store leftovers in an airtight container in the refrigerator for up to 3 days.
