Ingredients
  

Wet Ingredients

  • 3 pieces ripe bananas, very spotted and soft
  • 2 pieces eggs, warmed to room temp Room temperature eggs incorporate better.
  • 1 cup granulated sugar (or light brown sugar)
  • cup unsalted butter, melted Melted butter keeps the batter forgiving.
  • ¼ cup milk (or almond/oat milk) Use non-dairy options if preferred.
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 ½ cups all-purpose flour (or whole wheat) Whole wheat gives a nuttier flavor.
  • 1 teaspoon baking soda Ensure freshness for the best results.
  • ½ teaspoon salt

Optional Add-Ins

  • ½ cup chopped walnuts Pecans can be used instead, or omit.

Instructions
 

Preparation

  • Preheat oven to 350°F and grease a standard loaf pan.
  • Mash the bananas in a large bowl until almost smooth but with a few chunks.
  • Whisk in the eggs and sugar into the same bowl, followed by melted butter, milk, and vanilla.

Mixing

  • Sift flour with baking soda and salt, then fold into the wet mixture, mixing just until flour streaks disappear.
  • If using nuts, toss them with a tablespoon of flour before folding into the batter.

Baking

  • Pour the batter into the prepared pan and smooth the top.
  • Bake for about 50–60 minutes, checking at 45 minutes for doneness with a toothpick.
  • Tent foil over the loaf if browning too quickly after 30–35 minutes.
  • Cool in the pan for 10 minutes before transferring to a rack to cool completely.

Notes

For a simple crumb, omit the nuts entirely. Store wrapped tightly at room temperature for two days, or in the fridge for up to a week. Slices freeze well for up to three months between pieces of parchment.
