Equipment

  • thick-bottomed pan

Ingredients

  • 4 ripe plantains with dark skin
  • 5 tablespoons vegetable oil

Instructions

  • Heat the vegetable oil in a pan over medium heat.
  • Peel the plantains completely and cut them diagonally into pieces about 2.5 cm wide.
  • Carefully place the plantain pieces into the pan.
  • Fry the plantains until golden, turning often. They will be soft - this is normal.
  • They will be sweet - the riper the plantains, the sweeter they are. You can sprinkle sugar if you prefer them sweeter before cooking.

Notes

Platanos Maduros pair wonderfully with savory dishes like rice and beans, roast chicken, or grilled pork.
