Main Ingredients

  • 1 pound ground beef or turkey Halal
  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (15 oz) corn drained
  • 1 package taco seasoning check for Halal
  • 1 cup salsa make sure it’s a Halal brand
  • 2 cups tortilla chips crushed
  • 1 cup shredded cheese like cheddar or a Mexican blend
  • 1 cup sour cream optional
  • ¼ cup chopped green onions optional

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef or turkey until fully cooked (about 5-7 minutes). Drain any excess fat.
  • Stir in black beans, corn, taco seasoning, and salsa into the skillet with the cooked meat. Mix well and let simmer for about 5 minutes.
  • In a 9x13 inch baking dish, layer half of the crushed tortilla chips at the bottom.
  • Pour the meat and bean mixture over the chips and top with shredded cheese.
  • Bake for about 20 minutes or until the cheese is bubbly and slightly golden.
  • Remove from the oven and top with sour cream and chopped green onions if desired. Serve hot.

Notes

Feel free to substitute ingredients like ground chicken or tofu for a vegetarian option. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
