Ingredients
  

  • 1 ½ pounds boneless chicken thighs or breasts
  • 12–14 cups water
  • 2 heads garlic, halved
  • 2–3 cloves garlic, crushed
  • 1 large yellow onion, quartered
  • 1 large shallot, halved
  • 6 scallions
  • 3 stalks celery, chopped into chunks
  • 1 small bunch fresh cilantro
  • 4 inches fresh ginger, cut in half
  • 1 tablespoon fish sauce
  • 1 tablespoon apple cider vinegar
  • 1–2 tablespoons salt, to taste
  • 2 bay leaves
  • 1 tablespoon whole peppercorns
  • 2 teaspoons seasoning enhancer (optional)
  • Fresh lemon juice, to taste

Instructions
 

  • Rinse the chicken and prepare all vegetables and aromatics.
  • Place chicken in a large pot with garlic, onion, shallot, scallions, celery, cilantro, and ginger.
  • Add fish sauce, apple cider vinegar, salt, bay leaves, peppercorns, and seasoning enhancer.
  • Pour in water to fully cover ingredients.
  • Bring to a light boil, then reduce heat and simmer for 2 to 3 hours.
  • Skim foam if needed during cooking.
  • Strain broth into a clean container and discard solids.
  • Adjust seasoning and add fresh lemon juice before serving.

Notes

Adjust salt and lemon to taste for balance. Use thighs for richer broth or breasts for lighter flavor. Store in fridge up to 4 days or freeze for longer storage.
