Ingredients
  

  • 1.5 pounds ground beef
  • 2 large eggs
  • 1 medium onion, diced
  • 0.25 cup ketchup
  • salt and pepper, to taste
  • 1 cup quick oats
  • 0.5 cup Italian breadcrumbs
  • 10.75 ounce tomato soup, divided 1 can
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons brown sugar
  • 1 Tablespoon olive oil
  • 1 pound fresh green beans
  • non stick cooking spray

Instructions
 

  • Preheat oven to 400 degrees F.
  • In a large mixing bowl, combine ground beef, eggs, onion, ketchup, salt and pepper, oats, bread crumbs, and half the can of soup.
  • Spray a baking sheet with nonstick cooking spray.
  • Form meatloaf mixture into 12 patties and place on baking sheet.
  • In a small mixing bowl, whisk together remaining soup, Worcestershire sauce and brown sugar.
  • Spoon some of the soup mixture on top of each meatloaf patty.
  • Toss green beans in olive oil until evenly coated and spread out on baking sheet between meatloaf.
  • Bake for 25-30 minutes, or until meatloaf is cooked through and green beans are soft.

Notes

When mixing, it is easier to use hands instead of a large spoon, or a Kitchen Aid. Wash hands before and after handling meat. Alternatives for green beans include broccoli, cauliflower, carrots, zucchini, or sweet potatoes.
