Spanakopita Puff Pastry Twists

Flaky puff pastry twists filled with a herby spinach and feta mixture. A delightful twist on classic Greek spanakopita.

Equipment

Ingredients
  

Pastry

  • 2 sheets ready-rolled puff pastry 320g each
  • 1 egg beaten egg for brushing

Filling

  • 450 g frozen spinach thawed
  • 2 pieces spring onions finely chopped
  • 1 teaspoon garlic paste Bart brand
  • 2 teaspoon dill Bart brand
  • 1 tablespoon parsley Bart brand
  • 200 g crumbled feta
  • 1 piece lemon zested
  • 1 pinch salt and pepper to taste

Instructions
 

Preparation

  • Place the spinach in a clean tea towel and ring dry to remove all the liquid. Roughly chop.
  • Add all the filling ingredients to a large bowl and mix well.
  • Roll out the pastry sheets and slice in half widthways. Spread the spinach and feta mix over two of them and top with the remaining two sheets.
  • Slice each sheet into 6 widthways. Twist each one twice and arrange at least 1 inch apart on lined baking trays.
  • Brush each twist with egg wash and bake for 25 minutes until golden.

Notes

Serve warm as an appetizer or snack.
