  • 15.25 oz white cake mix
  • 3 oz vanilla pudding mix
  • 0.5 cup freeze-dried strawberries, ground
  • 1 cup pureed strawberries
  • 4 large eggs
  • 0.5 cup vegetable oil
  • 0.5 cup water
  • 1 tablespoon vanilla extract

Strawberry Cream Cheese Icing

  • 12 oz cream cheese slightly softened
  • 12 tablespoons unsalted butter softened
  • 6.5 cups powdered sugar
  • 0.5 cup freeze-dried strawberries, ground plus 2 tablespoons
  • 1.5 teaspoons vanilla extract
  • 0.25 teaspoon kosher salt
  • Fresh strawberries for garnish

Instructions
 

Baking the Cake

  • Preheat the oven to 350°F and prepare 2 8 inch cake pans.
  • In a large bowl, stir together cake mix, vanilla pudding mix, and ground strawberries.
  • Whisk in pureed strawberries, eggs, oil, water, and vanilla until smooth.
  • Divide evenly into prepared pans, and bake for 30 minutes until a toothpick comes out clean.
  • Let the cakes cool for 10 minutes in the pan, then remove and cool completely on a wire rack.

Making the Icing

  • In a stand mixer, beat cream cheese and butter until fluffy.
  • Add half of the powdered sugar and ground strawberries, mixing until incorporated.
  • Add remaining powdered sugar, vanilla, and salt, mixing until light and fluffy.

Assembling the Cake

  • Cut each cake in half horizontally to create 4 layers.
  • Layer cake with icing, spreading evenly, and finish with icing on top and sides.
  • Decorate with sliced strawberries, slice, and serve.

Notes

Freeze-dried strawberries can be found near dried fruits. Both the cake and the icing can be made ahead and stored appropriately.
