- ¼ cup salted butter softened
- ¼ cup flour
- 2 eggs
- 2 cups sweet corn if frozen thaw first
- 1 unbaked pie crust
Preheat oven to 325.
Combine the first 5 ingredients in a food processor. Blend until smooth.
Add to the unbaked pie crust. Spread evenly.
Bake for 30 minutes on the middle rack.
Turn the oven up to 425. Bake for an additional 10-15 minutes. It will puff up and the edges will turn golden brown.
Cool for at least 20 minutes. This is best served fresh at room temperature.
