Potatoes
- 2 pounds russet potatoes, peeled and small diced
- 3-4 Tablespoons oil
- 1.5 teaspoons salt
- 0.5 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 pound ground beef
- 1 packet taco seasoning
- water (amount called for on the back of the taco seasoning packet)
- 8 ounces Mexican shredded cheese
Toppings
- pico de gallo Optional
- guacamole Optional
- sour cream Optional
Cooking Instructions
Coat russet potatoes in oil.
Season potatoes with salt, pepper, garlic powder, and onion powder.
Cook potatoes in air fryer at 400F for 18-20 minutes, shaking the basket 2-3 times during cooking.
Brown and crumble ground beef, drain excess grease, then add taco seasoning and water. Cook according to packet directions.
To serve, layer cooked potatoes, topped with seasoned ground beef, then sprinkle with Mexican shredded cheese and optional toppings.
