  • ½ cup soy sauce
  • ½ cup mirin sweet rice wine
  • ¼ cup packed brown sugar
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)

Cooking Instructions

  • Combine the soy sauce, mirin, brown sugar, and grated ginger in a small saucepan.
  • Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring until the sugar dissolves completely.
  • Once simmering, slowly whisk in the cornstarch slurry.
  • Continue to cook and stir for about 1 to 2 minutes until the sauce thickens enough to coat the back of a spoon.
  • Remove from heat immediately. The sauce will thicken slightly more as it cools.

Notes

For a thicker glaze, use 1.5 teaspoons of cornstarch instead of 1 teaspoon. If you do not have mirin, substitute with dry sherry or sake mixed with 1 teaspoon of sugar. This sauce is excellent for glazing grilled salmon or tossing with stir-fried vegetables.
