Ingredients
  

Spice Cake

  • 2.25 cups all purpose flour plain flour in the UK
  • 0.25 cups cornstarch
  • 1.5 tsps baking powder
  • 0.5 tsps baking soda
  • 0.5 tsps salt
  • 2.5 tsps ground cinnamon
  • 1.5 tsps ground ginger powdered not fresh
  • 0.5 tsps ground cloves
  • 0.5 tsps ground nutmeg
  • 2 cups finely shredded apples about two medium to large apples
  • 1.5 cups soft light brown sugar firmly packed
  • 3 large eggs room temperature
  • 1 cup unflavoured vegetable oil I use canola
  • 0.25 cups whole milk room temperature
  • 2 tsps vanilla essence/extract

Apple Filling

  • 1 cup finely shredded apple about 1 medium to large sized apple
  • 0.25 cups soft light brown sugar
  • 2 tablespoon water
  • 2 tsps cornstarch
  • 0.5 tsps ground cinnamon
  • 3 tsps lemon juice freshly squeezed
  • 0.25 cups unsalted butter

Cream Cheese Buttercream

  • 1 cup unsalted butter room temperature
  • 4.5 cups powdered sugar also known as confectioners/icing sugar
  • 1.5 cups cream cheese cold, firm type
  • 1.5 tsps vanilla extract/essence
  • 1.5 tablespoon lemon juice freshly squeezed
  • 0.5 tsps ground cinnamon

Instructions
 

Preparation

  • Preheat oven to 180 °C (350°F) and grease two 8x3 inch cake tins.
  • In a bowl, sift together flour, cornstarch, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg. Mix until well combined.
  • Finely grate two apples and measure out 2 cups (300g). Set aside.
  • In a large bowl, combine light brown sugar, eggs, vegetable oil, milk, vanilla, and shredded apple. Mix until smooth.
  • Pour dry ingredients into wet ingredients and gently fold until just combined.
  • Distribute the batter evenly into the two cake tins and bake for 30-33 minutes.
  • Once baked, allow the cakes to cool in the tins for 20 minutes before transferring to a wire rack.

Apple Filling

  • Add all the apple filling ingredients to a saucepan and cook over medium heat, stirring continuously until melted.
  • Cook for a few more minutes until thick, then transfer to a bowl to cool.

Cream Cheese Frosting

  • In a large bowl, cream unsalted butter until light and fluffy.
  • Gradually add powdered sugar in 3 batches while mixing on low.
  • Add cream cheese, vanilla, lemon juice, and cinnamon, mixing until smooth.

Assembly

  • Level the tops of the cake layers with a serrated knife.
  • Place the first cake layer on a stand and spread buttercream on top.
  • Pipe a dam of frosting around the edges and fill the center with apple filling.
  • Add the second cake layer on top and frost the top and sides.
  • Pipe swirls on top using the remaining buttercream.

Notes

For best results, use gram measurements for accuracy. When using measuring cups for brown sugar, pack it firmly.
