Ingredients
  

For the chicken

  • 4 pieces chicken breasts pounded to 1-inch thickness
  • 3 tablespoon butter unsalted preferred
  • salt
  • freshly ground black pepper
  • 3 teaspoon Italian seasoning
  • ½ teaspoon garlic powder

For the rice

  • 1 cup rice long-grain white rice
  • 2.25 cups chicken broth lower sodium preferred
  • 1.5 lemons lemon juice juiced
  • 1 teaspoon Italian seasoning

For the garnish

  • fresh parsley finely chopped
  • fresh cilantro
  • lemon wedges

Instructions
 

Preparation

  • Pat the pounded chicken breasts dry with paper towels. In a small bowl, combine seasoning mixture and season chicken breasts.
  • Melt the butter in a skillet over medium-high heat. Sear chicken breasts for 1-2 minutes on each side until golden.
  • In the same skillet, add rice and stir for 1-2 minutes. Add chicken broth and lemon juice, then stir in Italian seasoning.
  • Nestle the chicken breasts into the rice mixture, cover, and simmer for 20-25 minutes.
  • Remove from heat and let rest. Fluff rice, adjust seasonings, and garnish with parsley, cilantro, and lemon wedges.

Notes

Using lower-sodium broth allows more control over the salt level in this dish.
